Honestly ever single class has fantastic solo build options, so if there are any that you are leaning towards because you like them just go for it. If you look up "gw2 (insert class here) open world solo build" you can find tons of very strong builds. That said I think the easiest right now are probably ranger, engineer, guardian, and necro.

When summoned, you can activate its skill to teleport it to your target, blinding and chilling your foe. Blinding stops their next attack, and chilling slows your foe down. Current viable use for Swords is using OH as extra skills for Dagger loop after exiting Shroud but we already have a rather tight and functional loop with Dagger/Torch and you have to weigh the gains and losses for swapping Torch for Sword. All the classes above are very strong in solo play, with guardian, engineer, and mesmer having the the best zerg support, probably in that order. Some necro builds can zerg very well too with boon rips and corruptions, or support. Rangers generally excel at roaming. These are general traits, and some builds can cross the lines.
Necro with full minion build + blood and death magic is still good, but as you said I believe it was nerfed a while back cause you could basically be unkillable with the lifesteal.
