After trying to connect for most of the day, I deleted my user profile on my xbox and then re-added it. That was it, took about 5 minutes and it immediately connected. Separately I was also getting the message later in the day that "Skyrim took too long to start."

I just tried the mod store after updating and it connects fine. Skyrim version is 1.0.0.11. But it's not doing this with Fallout 4 and those are Bethesda servers too.
