I think it works for higher-level soul gems too. If you don't monitor the follower's inventory carefully, further kills will begin filling higher-level soul gems than you probably want.
Unless you keep counting the number of gems of each type, you'll end up with weak ones. However apparently dropping the soul gem works to free the soul, emptying it.
